Lemon Tahini Pasta with Crispy Chickpeas
Ingredients
Chickpeas
- 1 can chickpeas
- 2 sprigs thyme
- 2 teaspoons salt
- 2 teaspoons pepper
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
Pasta
- 1 shallot
- 2 tablespoons chives
- 1 bay leaf
- 2 cups oat milk
- 1/2 cup water
- 2 teaspoons pepper
- 2 tablespoons tahini
- 1 teaspoon lemon rind
- juice of 1/2 lemon
- salt to taste
- olive oil
- pasta
Preparation
Chickpea
Heat olive oil in a skillet and add thyme.
Add chickpeas and remaining ingredients.
Cook stir frying until chickpeas are crispy.
Pasta
Heat oil in a pan and add bay leaf and chives. Sweat shallots until translucent.
Add oat milk and bring to a simmer.
Add pasta and water and cook frequently stirring until pasta is cooked.
Stir in tahini, lemon and pepper.
Season as desired and top with chickpeas. Garnish with chives.
