Miso Peanut Butter Veg N Rice Bowl
Ingredients
- brown rice, cooked
- roasted aubergine (in soy sauce)
- sautéed courgette & baby peppers
- steamed cauliflower & broccoli
- smoked tofu
- carrot sticks
- mango chutney
- rocket salad
- sauce: 1 tbsp peanut butter, 2 tsp miso, 1 tsp soy sauce, onion granules, water to thin
Preparation
Essentially cook everything
Mix the sauce ingredients
Stir the rice, veg and sauce w/ some mango chutney
Then serve with carrot sticks and more mango chutney on the side
I also had the broccoli & cauliflower on the side, you can mix it in if you want, have it on the side or just omit it)
