Miso Peanut Butter Veg N Rice Bowl

Ingredients

  • brown rice, cooked
  • roasted aubergine (in soy sauce)
  • sautéed courgette & baby peppers
  • steamed cauliflower & broccoli
  • smoked tofu
  • carrot sticks
  • mango chutney
  • rocket salad
  • sauce: 1 tbsp peanut butter, 2 tsp miso, 1 tsp soy sauce, onion granules, water to thin

Preparation

  1. Essentially cook everything

  2. Mix the sauce ingredients

  3. Stir the rice, veg and sauce w/ some mango chutney

  4. Then serve with carrot sticks and more mango chutney on the side

  5. I also had the broccoli & cauliflower on the side, you can mix it in if you want, have it on the side or just omit it)
