Rainbow Fried Rice

Ingredients

  • 2 cups preciously cooked brown rice
  • Vegetables of choice
  • I used
  • 1 small head of broccoli
  • A couple rainbow carrots
  • 1/4 cup frozen edamame (shelled), corn and peas each
  • A handful of chopped red cabbage
  • 1-2 scallions
  • Sauce: 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tbsp chopped scallion
  • 1 tsp chili flakes

Preparation

  1. Mix all ingredients for the sauce in a small bowl and set aside

  2. Cut washed broccoli into small florets and chop carrots, finely slice red cabbage and scallion

  3. Stir fry vegetables, starting with broccoli, then carrots, then peas, corn and edamame until tender

  4. Add rice and just egg if using and stir for about 5 more minutes

  5. At the end, add red cabbage, scallions and sauce
