Nut Butter and Zucchini Chocolate Chip Muffin

Ingredients

  • 2 cups rolled oats
  • 1/2 cup gluten free flour
  • 1/2 cup nut butter
  • 1/2 cup maple syrup
  • 1/2 cup olive oil
  • 2 cups grated zucchini
  • 2 flax or chia eggs
  • a splash of vanilla and 1 teaspoon of baking soda

Preparation

  1. Mix thought 1 cup vegan chocolate chips - I did a mix of dark and milk

  2. Spoon into muffin tin(s) and bake in 160 degree fan forced over for 15-18 minutes or until the top is bouncy

  3. Allow to cool and that’s it
