Nut Butter and Zucchini Chocolate Chip Muffin
Ingredients
- 2 cups rolled oats
- 1/2 cup gluten free flour
- 1/2 cup nut butter
- 1/2 cup maple syrup
- 1/2 cup olive oil
- 2 cups grated zucchini
- 2 flax or chia eggs
- a splash of vanilla and 1 teaspoon of baking soda
Preparation
Mix thought 1 cup vegan chocolate chips - I did a mix of dark and milk
Spoon into muffin tin(s) and bake in 160 degree fan forced over for 15-18 minutes or until the top is bouncy
Allow to cool and that’s it
