Ingredients

  • 350g pkg of extra firm tofu, cubed
  • 1 tbsp dark soy (can sub regular soy sauce)
  • 1/2 tbsp rice vinegar
  • 1 tbsp mirin
  • 2 tbsp olive oil
  • 1/2 tbsp minced garlic
  • 1 tsp minced ginger
  • 1 cup frozen peas/corn/carrot
  • 2 cups frozen chopped broccoli
  • 4 cups of day old cooked rice
  • 1-2 tbsp dark soy sauce (can sub regular soy sauce)
  • 1 tsp sesame oil
  • salt and pepper to taste
  • herbs for garnish like thyme, cilantro, green onion

Preparation

  1. Combine the soy sauce, rice vinegar, and mirin in a bowl, add in the cubed tofu, gently stir to combine and let marinate for 10-20 minutes.

  2. Heat 2 tbsp olive oil in a large non-stick pan over medium-high heat.

  3. When hot, add garlic, ginger, frozen peas, corn, and broccoli, cook for 3-5 minutes or until veggies are thawed.

  4. Add the marinated tofu, discarding any excess liquid, and cook for 3 minutes or until lightly browned.

  5. Add the cooked rice and soy sauce, starting with 1 tbsp and taste as you go.

  6. Add sesame oil, salt, and pepper.

  7. Stir to combine and cook for 2 minutes or until everything is warmed through.

  8. Garnish with fresh herbs and sesame seeds.

Tips

  1. Use leftover rice for best results as it fries better.

  2. Substitute with your favorite plant-based protein if desired.

  3. Customize with whatever vegetables you have in your fridge.
