Super Flavorful Pasta Bowl

Ingredients

  • 1 tsp olive oil
  • 2 garlic cloves, minced
  • 1 yellow squash, cut lengthwise then sliced
  • 1 cup frozen peas
  • 1/2 cup corn
  • 2 piquillo peppers, chopped
  • 3 cups fresh baby spinach
  • 1 1/2 tsp rosemary
  • 1 tsp basil
  • 1/2 tsp red pepper flakes
  • 1 cup oat or coconut milk
  • 1/4 cup tahini
  • 3 Tbsp nutritional yeast
  • 1 lemon, juiced
  • 1 Tbsp white miso
  • salt and pepper to taste
  • Pasta

Preparation

  1. Heat pan over medium heat. Add oil and garlic, cook 5 minutes.

  2. Add peas, zucchini, rosemary, basil and red pepper flakes, continue to cook another 5 minutes.

  3. Add spinach, sauté until wilted.

  4. Meanwhile bring a pot of salted water to a boil for your pasta. Drop your pasta and cook al dente.

  5. In a bowl whisk together plant based milk, tahini, nutritional yeast, miso and lemon. Pour into pan and simmer until thickens.

  6. Add pasta.

  7. Just before serving add corn and piquillo peppers.
