Vegan Mushroom Stroganoff for Two
Ingredients
- 1 onion, diced
- 2-3 cloves garlic, minced
- 1 tablespoon vegetable oil
- 11 ounces mushrooms, sliced
- 4 tablespoons white wine (optional)
- 1 tablespoon tamari or soy sauce
- 3/4 cup vegetable broth or water
- 3/4 cup plant-based milk or cream
- 2 tablespoons cornstarch
- 1 tablespoon nutritional yeast flakes (optional)
- Fresh thyme leaves and/or parsley and/or tarragon, chopped
Spice mixture
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- a pinch of chili flakes
- sea salt to taste
- pepper to taste
Preparation
Heat vegetable oil in a large pan over medium heat
Add diced onion and minced garlic, sauté until softened, about 3-5 minutes
Add sliced mushrooms and cook until they release their moisture and brown, about 5-7 minutes
If using, add white wine and let it evaporate for 1-2 minutes
Stir in tamari or soy sauce, vegetable broth or water, plant-based milk or cream, cornstarch, and the spice mixture; bring to a simmer
Cook until the sauce thickens, about 5-10 minutes, stirring occasionally
If using, add nutritional yeast flakes and chopped fresh herbs; adjust seasoning with salt and pepper
Serve hot with brown rice or pasta of choice
