Vegan Pea and Mint Fritters
Ingredients
- 2 cups frozen peas, cooked
- 1/2 cup oat flour
- 1 tbsp coconut flour
- 3 tbsp nutritional yeast
- Juice of half a lemon
- 4-5 tbsp aquafaba
- Salt and pepper
- Fresh mint, to taste
- 1 spring onion
- Garlic granules
Serving
- REVO salmon alternative
- Vegan lemon mayo
Preparation
Mix together all ingredients and shape into fritters; add more flour or liquid if needed
Heat oil in a pan and fry fritters until golden and crisp on each side
Top with REVO salmon alternative and serve alongside vegan lemon mayo
