Vegan Pea and Mint Fritters

Ingredients

  • 2 cups frozen peas, cooked
  • 1/2 cup oat flour
  • 1 tbsp coconut flour
  • 3 tbsp nutritional yeast
  • Juice of half a lemon
  • 4-5 tbsp aquafaba
  • Salt and pepper
  • Fresh mint, to taste
  • 1 spring onion
  • Garlic granules

Serving

  • REVO salmon alternative
  • Vegan lemon mayo

Preparation

  1. Mix together all ingredients and shape into fritters; add more flour or liquid if needed

  2. Heat oil in a pan and fry fritters until golden and crisp on each side

  3. Top with REVO salmon alternative and serve alongside vegan lemon mayo
