Vegan Soffritto Vegetable Cooking Base

Ingredients

  • 2 carrots (peeled if not organic)
  • 2 celery stalks
  • 1 1/2 red onion
  • 4-5 garlic cloves
  • High quality oil (olive oil ideally)

Preparation

  1. Finely chop the carrots, celery, onion, and garlic.

  2. Heat a small amount of olive oil in a large skillet over medium heat.

  3. Add the chopped vegetables and cook, stirring occasionally, until softened and fragrant, about 10-15 minutes.

  4. Remove from heat, let cool, and portion into 6 cubes for storage or immediate use.
