Vegan Soffritto Vegetable Cooking Base
Ingredients
- 2 carrots (peeled if not organic)
- 2 celery stalks
- 1 1/2 red onion
- 4-5 garlic cloves
- High quality oil (olive oil ideally)
Preparation
Finely chop the carrots, celery, onion, and garlic.
Heat a small amount of olive oil in a large skillet over medium heat.
Add the chopped vegetables and cook, stirring occasionally, until softened and fragrant, about 10-15 minutes.
Remove from heat, let cool, and portion into 6 cubes for storage or immediate use.
