Vegan Barbie Beet Soup

Ingredients

  • 1 large beetroot, peeled and cubed
  • 3 medium potatoes, peeled and cubed
  • 1 small brown or red onion, chopped
  • 2 tablespoons olive or avocado oil
  • 1 tablespoon Italian or Tuscan seasonings
  • 3/4 cup walnuts
  • 1/2 cup hemp seeds
  • 1 cup soy milk
  • 1 1/2 cups water or vegetable stock

For serving

  • Fresh coriander
  • seeds
  • toasted bread

Preparation

  1. Preheat the oven to 180C and line a baking tray with parchment paper. Arrange the beetroot, potatoes and onions on the prepared baking tray. Drizzle with oil and sprinkle with spices. Pop it in the oven for 30–40 minutes or until the vegetables are tender.

  2. Add the roasted vegetables to a blender along with walnuts, hemp seeds, soy milk and water/vegetable stock.

  3. Puree the mixture until it reaches a creamy texture. Add more water/vegetable stock if the soup is too thick.

  4. Garnish with fresh coriander, seeds and nuts.

  5. Serve with toasted bread and enjoy right away.

Notes

  1. This soup is made without cream and is a perfect blend of wholesome ingredients and flavours.
