Vegan Gooey Avocado Brownies

Ingredients

  • 1 cup soy milk
  • 1 small/medium avocado
  • 4 medjool dates
  • 1 teaspoon baking powder
  • 1/4 cup buckwheat flour
  • 3/4 cup wholemeal spelt flour
  • 1/3 cup cacao powder
  • 1/2 teaspoon vanilla extract
  • 70 grams dark chocolate, melted

Preparation

  1. Preheat your oven to 180°C and line a baking tray with baking paper.

  2. Put all the ingredients in a blender and mix until smooth.

  3. Transfer the batter to the baking tray.

  4. Bake for about 20-25 minutes; check with a knife - the top must be dry but keep the middle a bit wet.

  5. Let cool down completely and transfer to the fridge for 2 hours.

  6. Slice and enjoy!
