Vegan Gooey Avocado Brownies
Ingredients
- 1 cup soy milk
- 1 small/medium avocado
- 4 medjool dates
- 1 teaspoon baking powder
- 1/4 cup buckwheat flour
- 3/4 cup wholemeal spelt flour
- 1/3 cup cacao powder
- 1/2 teaspoon vanilla extract
- 70 grams dark chocolate, melted
Preparation
Preheat your oven to 180°C and line a baking tray with baking paper.
Put all the ingredients in a blender and mix until smooth.
Transfer the batter to the baking tray.
Bake for about 20-25 minutes; check with a knife - the top must be dry but keep the middle a bit wet.
Let cool down completely and transfer to the fridge for 2 hours.
Slice and enjoy!
