Vegan Mud Cake Brownies

Ingredients

  • 1 1/4 cup blanched almond meal
  • 3/4 cup wholemeal spelt flour (or sub any gluten-free flour of choice)
  • 2/3 cup cacao powder
  • 2 tsp baking powder
  • 1/4 cup warm water
  • 1/4 cup avocado oil
  • 1 cup maple syrup
  • 2 tsp vanilla extract

Chocolate icing

  • 2 TBSP avocado oil
  • 2 TBSP cacao powder
  • 2 TBSP maple syrup

Preparation

  1. In a large bowl mix the almond meal, flour, cacao powder and baking powder.

  2. In a separate bowl mix the water, avocado oil, maple syrup and vanilla.

  3. Pour the liquid mixture over the dry and mix to combine.

  4. Pour batter into a lined square baking tin and bake for about 45 minutes at 180 C or until a toothpick comes out clean.

  5. Remove from oven and allow to cool before icing.

  6. Mix the icing ingredients in a small bowl and pour over cake, smooth with a spatula. Pop in the fridge for an hour to harden.

  7. Decorate with raspberries or toppings of choice slice and enjoy.
