Carrot Loaf with Cashew Frosting

Ingredients

  • 1/2 cup coconut oil melted
  • 4 organic eggs
  • 1/4 cup honey
  • 1 tsp bicarb soda
  • Squeeze of lemon juice to activate the soda
  • 1 tsp ground turmeric
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup chia seeds
  • 1/4 cup dates pitted and chopped
  • 1.5 cups grated carrot
  • 1/3 cup shredded coconut
  • 1/2 cup coconut flour

Frosting

  • 1 1/2 cups raw cashews soaked in water for 4 hours minimum or overnight
  • 1/2 cup full-fat coconut milk
  • 3-4 Tbsp maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 tsp lemon zest
  • 1-2 Tbsp lemon juice
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea salt

Preparation

  1. Blend all wet cake ingredients until smooth.

  2. Add all dry cake ingredients into a bowl and pour the wet mixture over them.

  3. Mix until well blended.

  4. Preheat oven to 170°C

  5. Cook in the preheated oven for 1 hour or until cooked through.

  6. Allow to cool for 20 minutes.

  7. Meanwhile, place all frosting ingredients in a food processor and blend until smooth.

  8. Smooth the frosting over the cooled loaf and serve.
