Carrot Loaf with Cashew Frosting
Ingredients
- 1/2 cup coconut oil melted
- 4 organic eggs
- 1/4 cup honey
- 1 tsp bicarb soda
- Squeeze of lemon juice to activate the soda
- 1 tsp ground turmeric
- 2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 cup chia seeds
- 1/4 cup dates pitted and chopped
- 1.5 cups grated carrot
- 1/3 cup shredded coconut
- 1/2 cup coconut flour
Frosting
- 1 1/2 cups raw cashews soaked in water for 4 hours minimum or overnight
- 1/2 cup full-fat coconut milk
- 3-4 Tbsp maple syrup
- 1/4 cup melted coconut oil
- 1/4 tsp lemon zest
- 1-2 Tbsp lemon juice
- 1 tsp pure vanilla extract
- 1/4 tsp sea salt
Preparation
Blend all wet cake ingredients until smooth.
Add all dry cake ingredients into a bowl and pour the wet mixture over them.
Mix until well blended.
Preheat oven to 170°C
Cook in the preheated oven for 1 hour or until cooked through.
Allow to cool for 20 minutes.
Meanwhile, place all frosting ingredients in a food processor and blend until smooth.
Smooth the frosting over the cooled loaf and serve.
