Mini Raspberry Lime Cheesecakes

Ingredients

  • 6 coconut date rolls
  • 1 1/2 cups raw cashews, soaked overnight
  • 5-6 pitted medjool dates
  • 1/4 cup lime juice
  • 1/2 cup full-fat coconut milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/2 cup raspberries

Preparation

  1. Pinch each date roll in half and press coconut side down into the bottom of a mini muffin tin

  2. Blend the soaked cashews, medjool dates, lime juice, coconut milk, vanilla, and salt

  3. Spoon the mixture into each mini muffin, filling three-quarters of the way

  4. Blend raspberries into the remaining filling

  5. Spoon the berry filling on top and swirl

  6. Freeze overnight
