Mini Raspberry Lime Cheesecakes
Ingredients
- 6 coconut date rolls
- 1 1/2 cups raw cashews, soaked overnight
- 5-6 pitted medjool dates
- 1/4 cup lime juice
- 1/2 cup full-fat coconut milk
- 1 tsp vanilla extract
- Pinch of salt
- 1/2 cup raspberries
Preparation
Pinch each date roll in half and press coconut side down into the bottom of a mini muffin tin
Blend the soaked cashews, medjool dates, lime juice, coconut milk, vanilla, and salt
Spoon the mixture into each mini muffin, filling three-quarters of the way
Blend raspberries into the remaining filling
Spoon the berry filling on top and swirl
Freeze overnight
