Pink Beet Chocolate Truffles with Vanilla Center
Ingredients
- 1/2 cup @lovebeets Organic Cooked Beets
- 1/2 cup non-dairy yogurt
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- Pinch of salt
- 2/3 cup coconut flour
- 1 cup dark chocolate chips
- Optional: sprinkles
Preparation
In a food processor, combine the beets, yogurt, maple syrup, and vanilla. Blend until smooth.
Add the coconut flour and salt. Process to form a dough.
Roll into balls. Freeze for 2 hours or longer until firm.
Coat in melted chocolate, top with sprinkles, and refrigerate until set.
