Pink Beet Chocolate Truffles with Vanilla Center

Ingredients

  • 1/2 cup @lovebeets Organic Cooked Beets
  • 1/2 cup non-dairy yogurt
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2/3 cup coconut flour
  • 1 cup dark chocolate chips
  • Optional: sprinkles

Preparation

  1. In a food processor, combine the beets, yogurt, maple syrup, and vanilla. Blend until smooth.

  2. Add the coconut flour and salt. Process to form a dough.

  3. Roll into balls. Freeze for 2 hours or longer until firm.

  4. Coat in melted chocolate, top with sprinkles, and refrigerate until set.

  5. Enjoy!
