Chocolate Chip Cookie Dough Bites
Ingredients
- 4 medjool dates
- 3 tablespoons maple syrup
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 cup coconut flour
- Plant-based milk (as needed)
- Chocolate chips (optional, for dough)
- 1.5 cups chocolate chips (for coating)
Preparation
In a food processor, blend 4 medjool dates.
Add 3 tablespoons of maple syrup, 1 teaspoon of almond extract, and 1 teaspoon of vanilla extract, then blend.
Slowly add 1 cup of coconut flour.
Add plant-based milk 1 tablespoon at a time until the dough sticks together.
If desired, fold in some chocolate chips.
Roll the dough into balls and put them in the freezer for 10 minutes.
Melt 1.5 cups of chocolate chips.
Roll the balls in the melted chocolate and place them on a baking sheet lined with parchment paper.
Once all balls are coated, place them back in the freezer.
