Vegan Cookie Dough with Chickpeas and Dates

Ingredients

  • 1 1/2 cups cooked Chickpeas
  • 1/4 cup almond butter
  • 3 ripe dates
  • 1 tsp Vanilla Extract
  • 3 tbsp Oat Flour
  • 2 tbsp Maple Syrup, plus more to taste
  • 1/4 cup dark Chocolate Chips
  • A pinch of Salt

Preparation

  1. Add all ingredients except for the chocolate chips to a high-speed blender or food processor.

  2. Process until a thick, even dough forms, scraping the sides as necessary.

  3. Stir in the chocolate chips.

  4. Enjoy the dough; note that it will thicken more after refrigerating.
