Vegan Matcha Bites with Chickpea and Cashew
Ingredients
Base
- 1 cup chickpeas or white beans
- 1 cup dates
- 2 tbsp cashew butter or any nut butter
- 3-4 tbsp oat flour
Matcha layer
- 1 cup cashews soaked in hot water for at least 20 minutes
- 3-4 tbsp maple syrup
- 2 tbsp oat flour
- 1 tsp matcha powder
Preparation
Add all base ingredients to a blender and mix until combined. Make small balls and flatten them.
Add all matcha layer ingredients to a blender and mix until combined. Pour the mixture over the base.
Cover the bites in melted chocolate.
Store in the fridge or in the freezer.
