Vegan Matcha Bites with Chickpea and Cashew

Ingredients

Base

  • 1 cup chickpeas or white beans
  • 1 cup dates
  • 2 tbsp cashew butter or any nut butter
  • 3-4 tbsp oat flour

Matcha layer

  • 1 cup cashews soaked in hot water for at least 20 minutes
  • 3-4 tbsp maple syrup
  • 2 tbsp oat flour
  • 1 tsp matcha powder

Preparation

  1. Add all base ingredients to a blender and mix until combined. Make small balls and flatten them.

  2. Add all matcha layer ingredients to a blender and mix until combined. Pour the mixture over the base.

  3. Cover the bites in melted chocolate.

  4. Store in the fridge or in the freezer.
