Vegan Strawberry Chocolate Cashew Butter Truffles

Ingredients

  • 1 cup almond flour
  • 1/3 cup freeze dried strawberries
  • 1/2 cup cashew butter
  • 1/4 melted coconut butter
  • 1/2 cup maple syrup
  • 1/2 cup cocoa powder
  • 1/4 teaspoon sea salt
  • 2/3 cup dark chocolate, melted (for coating) or extra pulsed freeze dried strawberries

Preparation

  1. Put almond flour, dried strawberries and cashew butter into a food processor and pulse for a few seconds until it is integrated.

  2. Add your remaining ingredients and process for a few seconds until your mixture is well combined. It will be sticky and delicious.

  3. If your dough is too soft to assemble (it shouldn't be) place in the refrigerator for 10 minutes.

  4. Using a medium sized cookie scoop or your hands roll into balls and cool in your fridge for 10 minutes.

  5. Coat in chocolate or extra strawberries and chill for another 10 minutes.
