No Bake Granola Bars
Ingredients
- 180g medjool dates
- 100g pumpkin seeds
- 100g sunflower seeds
- 150g whole almonds
- 8 heaped tablespoons cashew or peanut butter
- 75g rolled oats
- 1 teaspoon ground cinnamon
- 1-2 tablespoons maple syrup or honey (optional)
Preparation
Blend the dates and peanut butter in a food processor to get a smooth paste.
Stir in the rest of the ingredients until they clump together into a big sticky ball. If not holding together, add a little more nut butter.
Press the mix into your mould.
Leave to set in the fridge for 30 minutes.
Cut into bars and enjoy
Optional toasting
Toast all the nuts, seeds, and oats in the oven at 180°C for 10 minutes to add flavor.
