Best Crunchy Granola with Clusters
Ingredients
- 3 cups rolled oats
- 3/4 cup chopped nuts of choice (I used pecans)
- 1/4 cup pumpkin seeds
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- other optional add ins: shredded coconut + sesame seeds
- 1 cup medjool dates, soaked (in boiling water for 15 min)
- 1/4 cup melted coconut oil
- 1 tbsp maple syrup
- 1 tsp vanilla extract
Preparation
Preheat the oven to 350 degrees.
Line a baking sheet with a silicone baking mat or parchment paper.
In a blender, blend dates, maple syrup, vanilla, and coconut oil until it forms a smooth paste.
In a large bowl, combine the rest of the ingredients.
Stir the date paste into the dry ingredients until thoroughly combined (recommend a wooden spoon or rubber spatula for this, it will take some arm work!).
Spread in an even layer on a baking sheet and bake for 15-17 min. until golden brown.
Let cool for 10 min. before transferring to an air tight glass jar.
