Best Crunchy Granola with Clusters

Ingredients

  • 3 cups rolled oats
  • 3/4 cup chopped nuts of choice (I used pecans)
  • 1/4 cup pumpkin seeds
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • other optional add ins: shredded coconut + sesame seeds
  • 1 cup medjool dates, soaked (in boiling water for 15 min)
  • 1/4 cup melted coconut oil
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 350 degrees.

  2. Line a baking sheet with a silicone baking mat or parchment paper.

  3. In a blender, blend dates, maple syrup, vanilla, and coconut oil until it forms a smooth paste.

  4. In a large bowl, combine the rest of the ingredients.

  5. Stir the date paste into the dry ingredients until thoroughly combined (recommend a wooden spoon or rubber spatula for this, it will take some arm work!).

  6. Spread in an even layer on a baking sheet and bake for 15-17 min. until golden brown.

  7. Let cool for 10 min. before transferring to an air tight glass jar.
