Ginger Tahini Granola with Oats and Spices

Ingredients

  • 2 cups rolled oats
  • 1/4 cup tahini
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • Optional add-ins: cacao nibs, pepitas, or raisins

Preparation

  1. Add oats to a large skillet or sauté pan over medium heat and stir and toast for 1-2 minutes.

  2. Add seasonings and salt, toss to combine, then add remaining ingredients.

  3. Lower heat slightly and continue to stir for 5-6 minutes to prevent burning.

  4. Lower heat to low and stir for an additional 3-5 minutes until granola is golden.

  5. Remove from heat and allow to cool completely before storing. It will crisp up as it cools and is also good eaten hot.

  6. Ensure tahini is runny for best results. Adjust maple syrup amount if you prefer sweeter granola.
