Vanilla Oats with Banana and Coconut Topping

Ingredients

  • 1/2 cup rolled oats
  • 1/4 tsp vanilla extract
  • Pinch of cinnamon
  • Pinch of salt
  • 1 1/4 cup unsweetened almond milk
  • 1 banana

Preparation

  1. Add all ingredients to a saucepan and bring to a simmer.

  2. Allow to cook for 3-5 minutes to thicken and remove from heat.

  3. Serve oats with additional toppings as desired.

  4. For the roasted coconut, preheat oven to 350F and toast coconut flakes for about 3 minutes or until golden around the edges.
