Coconut Cream Oatmeal

Ingredients

  • 1/3 cup rolled oats
  • 1 tsp coconut flakes
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1/2 tsp vanilla extract
  • 2 tbsp coconut cream
  • 2 tsp maple syrup or 1/2 a mashed banana
  • pinch of salt

Preparation

  1. Add all ingredients to a sauce pan and bring to a low simmer

  2. Allow oats to cook while stirring continuously to help maintain creaminess of oats

  3. Should cook in 4-5 minutes

  4. Once at desired consistency, serve as desired

  5. I topped mine with nectarines, blackberries, blueberries, chocolate tahini and cacao nibs
