Coconut Lime Oatmeal

Ingredients

  • 1/3 cup rolled oats
  • 1 tbsp ground flax seeds
  • 1/2 a mashed banana
  • pinch of cardamom
  • pinch of salt
  • 1 cup coconut milk
  • juice and zest of half a lime
  • optional: 1 tsp of maple syrup to sweeten to preference

Preparation

  1. Add all ingredients except lime juice to to a sauce pan and bring to a simmer

  2. Allow to thicken and cook for about 5-6 mins

  3. Remove from heat and stir in lime juice

  4. Serve and top as desired
