Easy Homemade Granola with Tahini and Nuts

Ingredients

  • 2 tablespoons tahini
  • 2 tablespoons melted coconut oil
  • 2 tablespoons maple syrup
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • pinch of pink salt
  • rolled oats
  • chopped almonds
  • pepitas
  • dried apricots

Preparation

  1. In a small bowl, mix together 2 tablespoons tahini, 2 tablespoons melted coconut oil, 2 tablespoons maple syrup, 1 tablespoon cinnamon, 1 teaspoon nutmeg, 1 teaspoon allspice, and a pinch of pink salt. Stir to mix.

  2. In a large bowl, add granola ingredients such as rolled oats, chopped almonds, pepitas, and dried apricots.

  3. Stir in the wet ingredients until the granola is thinly coated. Adjust quantities for smaller batches as needed.

  4. Bake in the oven at 180°C for around 25 minutes or until golden, stirring halfway through cooking.

  5. Store the granola in an airtight container; it will last for up to 2 weeks.
