Chewy Raspberry Granola Bars

Ingredients

  • 2 1/2 cups rolled oats
  • 6 tablespoons coconut oil (melted)
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 2 teaspoons chia seeds
  • 1 tablespoon linseeds or flax seed
  • 1/4 cup sliced almonds
  • 1/4 cup shredded coconut
  • 1/4 cup pepitas
  • 1 cup fresh raspberries

Preparation

  1. Preheat oven to 180 degrees Celsius

  2. Line an 8x10 inch pan with baking paper

  3. In a food processor, pulse 1/2 cup oats until it resembles flour

  4. In a large bowl, combine all ingredients except for raspberries until completely mixed, then gently fold in raspberries

  5. Spread mixture onto the baking pan in an even layer; don’t worry if some or most of the raspberries get crushed

  6. Bake for 20 minutes or until golden

  7. Remove and cool on a wire rack

  8. Once cooled, place the pan in the fridge and chill overnight

  9. Cut and serve
