Chewy Raspberry Granola Bars
Ingredients
- 2 1/2 cups rolled oats
- 6 tablespoons coconut oil (melted)
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- 2 teaspoons vanilla extract
- 1/4 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 2 teaspoons chia seeds
- 1 tablespoon linseeds or flax seed
- 1/4 cup sliced almonds
- 1/4 cup shredded coconut
- 1/4 cup pepitas
- 1 cup fresh raspberries
Preparation
Preheat oven to 180 degrees Celsius
Line an 8x10 inch pan with baking paper
In a food processor, pulse 1/2 cup oats until it resembles flour
In a large bowl, combine all ingredients except for raspberries until completely mixed, then gently fold in raspberries
Spread mixture onto the baking pan in an even layer; don’t worry if some or most of the raspberries get crushed
Bake for 20 minutes or until golden
Remove and cool on a wire rack
Once cooled, place the pan in the fridge and chill overnight
Cut and serve
