Homemade Hearty Granola

Ingredients

  • /3 cup maple syrup
  • 1/3 cup almond butter
  • 1 tsp vanilla extract
  • pinch of cinnamon & pinch of salt
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup walnut pieces
  • 1/4 cup cashews
  • 1/4 cup chia seeds
  • 1/4 cup sunflower seeds
  • peanut butter
  • chocolate

Preparation

  1. Preheat oven to 325°F. in a large bowl, whisk together 1/3 cup maple syrup, 1/3 cup almond butter, 1 tsp vanilla extract, pinch of cinnamon & pinch of salt

  2. Pour in 2 cups rolled oats, 1/2 cup raw pumpkin seeds, 1/2 cup walnut pieces, 1/4 cup cashews, 1/4 cup chia seeds, 1/4 cup sunflower seeds & fold it all into the wet mixture until everything coated

  3. Transfer to a baking tray lined with a silicone mat & press into a thin layer using a spatula

  4. Bake for 20 mins on the bottom rack, then use a spatula to flip the granola. bake for an additional 10 mins, then remove. OG recipe says bake 6-7 mins more, but I prefer the deep toasted nut flavor & larger chunks ?

  5. If using dried fruit or chocolate chips, add them to the granola after out of the oven while still hot & toss the mix

  6. Let cool completely before placing into a jar, store leftovers at room temp or in the fridge (Caitlin recommends fridge for crunchier granola) for up to 1 month

  7. What are your fav granola additions? My next batch I’ll use peanut butter & probably add chocolate
