Tropical Overnight Oats

Ingredients

  • 2 cups rolled oats
  • 2 cups unsweetened almond milk
  • 3 tbsp chia seeds
  • 2 tbsp maple syrup
  • 2-3 sungold kiwis
  • 3/4 cup frozen pineapple tidbits
  • 3/4 cup frozen mango
  • 1 cup cashews
  • 1-2 tbsp peanut or cashew butter
  • 1/2 cup shredded coconut

Preparation

  1. Pour rolled oats into large sealable container

  2. Add almond or plant-based milk of your choice

  3. Use a spoon to stir together until combined

  4. Add chia seeds, stir and combine once more

  5. Add fruit into the mix

  6. Chop fruit to desired size

  7. I’ve noticed it helps to let the fruit soak overnight to help the oats absorb the flavors and sweetness

  8. Place in fridge overnight or for a minimum of 3 hours

  9. Morning of: serve and add toppings
