Blueberry, Lemon & Coconut Overnight Oats

Ingredients

  • 3/4 cup rolled oats
  • 1/4 cup desiccated coconut
  • 1/2 cup coconut milk
  • 1/2 cup coconut yoghurt
  • 2 tsp chia seeds
  • 1 tsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tbsp lemon juice (optional)
  • 1/3-1/2 cup blueberries

Preparation

  1. Stir together all ingredients until combined, then cover and place in the fridge overnight

  2. Serve from the fridge topped with fruits of choice

  3. Add a splash more milk, if a thinner texture is desired
