Blueberry, Lemon & Coconut Overnight Oats
Ingredients
- 3/4 cup rolled oats
- 1/4 cup desiccated coconut
- 1/2 cup coconut milk
- 1/2 cup coconut yoghurt
- 2 tsp chia seeds
- 1 tsp maple syrup
- 1 tsp vanilla extract
- 1/2 tbsp lemon juice (optional)
- 1/3-1/2 cup blueberries
Preparation
Stir together all ingredients until combined, then cover and place in the fridge overnight
Serve from the fridge topped with fruits of choice
Add a splash more milk, if a thinner texture is desired
