Blueberry Muffin Oatmeal

Ingredients

  • 3/4 cup rolled oats
  • Water for soaking
  • Milk for soaking (half and half with water)
  • Almond milk for cooking
  • 1/2 banana, mashed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon maca powder
  • 1 teaspoon chia seeds or flaxseeds
  • 1 teaspoon almond butter
  • Blueberries for topping
  • Maple syrup for topping
  • Shredded coconut for topping
  • Nuts for topping
  • Banana for topping
  • Nut butter for topping
  • Granola for topping

Preparation

  1. Soak 3/4 cup of oats overnight in a mixture of half water and half milk.

  2. In the morning, cook the soaked oats slowly on a stovetop with additional almond milk.

  3. Add 1/2 mashed banana, 1 teaspoon cinnamon, 1 teaspoon vanilla, 1 teaspoon maca powder, 1 teaspoon chia or flaxseed, and 1 teaspoon almond butter; stir until thick and cakey.

  4. Top with warmed blueberries, maple syrup, coconut, nuts, banana, nut butter, and granola.
