Homemade Crunchy Peanut Butter Granola Chunks

Ingredients

  • 2 cups rolled oats
  • 1/2 cup walnut pieces
  • 1/2 cup almonds
  • 1/2 cup hazelnuts
  • 1/2 cup raw millet or quinoa
  • 2 Tbs sesame seeds
  • 2 Tbs flax seeds
  • 2 Tbs coconut flour
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil
  • 2 tsp vanilla extract
  • Pinch salt

Preparation

  1. Preheat your oven to 160C and line a baking tray with parchment paper.

  2. In a large bowl mix all the dry ingredients.

  3. Gently heat the coconut oil, peanut butter, maple syrup and vanilla over medium heat in a small saucepan.

  4. Pour this syrup mixture on the dry ingredients, mix well until everything is nicely coated.

  5. Spread the granola evenly on the baking tray and pack it down.

  6. Bake for 15-20 minutes, or until it’s golden brown. Turn half way.

  7. Leave the granola on the tray to cool completely: once it’s completely cooled the consistency will be crunchy.

  8. Break into big chunks and store them in an airtight container.
