Crispy Trail Mix Granola

Ingredients

  • 2 cups rolled oats
  • 1/2 cup buckwheat groats
  • 1/2 cup leftover pulp from making nut milk (optional)
  • 1/2 cup chopped almonds
  • 1/4 cup sunflower seeds
  • 1/3 cup pip and nut trail mix almond butter
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tbsp vanilla
  • Pinch of salt

Add-ins

  • dry blueberries
  • coconut chips
  • banana chips

Preparation

  1. Preheat oven to 350F and line a baking sheet with parchment paper.

  2. Mix oats, buckwheat groats, almonds, sunflower seeds, nut pulp, and salt in a bowl.

  3. Mix nut butter, coconut oil, maple syrup, and vanilla in a separate bowl.

  4. Pour the wet mixture over the dry mixture and mix well to ensure everything is coated.

  5. Bake in the oven for about 25 minutes, tossing every 10 minutes.

  6. Once done, remove from the oven and let it cool down without stirring.

  7. Add the blueberries, banana chips, and coconut chips.
