Homemade Vegan Granola with Dates and Banana

Ingredients

Liquids

  • 5 dates
  • 1 small banana
  • 2 tbsp coconut oil
  • 2 tbsp peanut butter
  • 1 dl plant milk
  • 1 tsp salt

Dry mix

  • 3 dl oats
  • 3 dl muesli
  • 1 dl pumpkin seeds
  • 1 dl coconut flakes
  • 2 dl nuts (I used almonds & hazelnuts)
  • 0.5 dl flaxseeds

Preparation

  1. Blend everything together in a food processor until you have a smooth liquid. Set aside.

  2. Mix all the dry ingredients in a bowl.

  3. Pour the liquid on top and stir everything well together.

  4. Pour the granola on a baking tray and bake in the oven for 45 minutes at 150 degrees Celsius. Stir the granola a few times in between so it doesn’t burn.

  5. Add the granola to a jar when it's done. Enjoy!
