Crunchy Buttery Coconut Granola

Ingredients

Liquid

  • 5 dates
  • 2 tbsp peanut butter
  • 2 tbsp coconut oil
  • 1 dl water

Dry mix

  • 3 dl oats
  • 3 dl nuts
  • 0.5 dl pumpkin seeds
  • 1 dl coconut flakes
  • Pinch of salt

Preparation

  1. Add the ingredients to a food processor and mix until you have a smooth liquid.

  2. Chop the nuts into smaller pieces and add them to a big bowl, together with the rest of the ingredients.

  3. Add the liquid and combine everything together.

  4. Add the granola to a baking tray, spread it out and put the tray in the oven at 150 degrees for around 35 minutes.

  5. Stir every 10 minutes during baking.

  6. Store in a jar and enjoy.

  1. Customize the granola by adding only your favorite ingredients.

  2. Use it to top smoothie bowls for extra crunch.
