Apricot Pistachio Coconut Cardamom Granola

Ingredients

  • 100 g rolled oats
  • 100 g pistachios - crushed
  • 100 g sliced almonds
  • 100 g crushed hazelnuts
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 100 g coconut flakes
  • 3 tbsp peanut butter
  • 70 ml coconut oil
  • 20 g of sesame seeds
  • 60 g pumpkin seeds
  • 3 tbsp of maple syrup

Preparation

  1. Preheat the oven to 180°C. Line a large baking tray with parchment paper.

  2. Heat the oil, maple syrup and peanut butter in a saucepan - just until they mix.

  3. Place all dry ingredients in a bowl and add the oil mix. Mix well. Place onto the baking tray and bake for 15 minutes.

  4. Remove from the oven half way and give the tray a shake so the granola browns consistently.

  5. Remove from the oven and allow to cool completely and store in a large airtight jar.
