Apricot Pistachio Coconut Cardamom Granola
Ingredients
- 100 g rolled oats
- 100 g pistachios - crushed
- 100 g sliced almonds
- 100 g crushed hazelnuts
- 1 tsp cinnamon
- 1 tsp cardamom
- 100 g coconut flakes
- 3 tbsp peanut butter
- 70 ml coconut oil
- 20 g of sesame seeds
- 60 g pumpkin seeds
- 3 tbsp of maple syrup
Preparation
Preheat the oven to 180°C. Line a large baking tray with parchment paper.
Heat the oil, maple syrup and peanut butter in a saucepan - just until they mix.
Place all dry ingredients in a bowl and add the oil mix. Mix well. Place onto the baking tray and bake for 15 minutes.
Remove from the oven half way and give the tray a shake so the granola browns consistently.
Remove from the oven and allow to cool completely and store in a large airtight jar.
