Tropical Granola with Summer Fruits and Nuts

Ingredients

  • 2 1/2 cups rolled oats (gluten free, if needed)
  • 1 cup unsweetened flaked coconut (large flakes)
  • 2/3 cup almond flour
  • 2/3 cup macadamia nuts, halved if large
  • 1/4 cup ground flax seed
  • 1/4 cup coconut sugar
  • 1/3 cup coconut oil
  • 1/3 cup pure maple syrup (plus more, if needed)
  • 2 tsp vanilla extract
  • pinch salt (optional)
  • 2/3 cup diced dried mango (preferably unsweetened)
  • 2/3 cup diced dried pineapple (preferably unsweetened)

Preparation

  1. Preheat oven to 300F and line baking tray with parchment paper.

  2. In a bowl, combine rolled oats, almond flour, macadamia nuts, ground flax seed, coconut sugar, coconut oil, pure maple syrup, vanilla extract, and a pinch of salt if using.

  3. Mix all ingredients well.

  4. Spread the mixture evenly onto the baking tray.

  5. Bake for 25-30 minutes.

  6. After baking, mix in diced dried mango and diced dried pineapple, along with any other desired fruit.
