Tropical Granola with Summer Fruits and Nuts
Ingredients
- 2 1/2 cups rolled oats (gluten free, if needed)
- 1 cup unsweetened flaked coconut (large flakes)
- 2/3 cup almond flour
- 2/3 cup macadamia nuts, halved if large
- 1/4 cup ground flax seed
- 1/4 cup coconut sugar
- 1/3 cup coconut oil
- 1/3 cup pure maple syrup (plus more, if needed)
- 2 tsp vanilla extract
- pinch salt (optional)
- 2/3 cup diced dried mango (preferably unsweetened)
- 2/3 cup diced dried pineapple (preferably unsweetened)
Preparation
Preheat oven to 300F and line baking tray with parchment paper.
In a bowl, combine rolled oats, almond flour, macadamia nuts, ground flax seed, coconut sugar, coconut oil, pure maple syrup, vanilla extract, and a pinch of salt if using.
Mix all ingredients well.
Spread the mixture evenly onto the baking tray.
Bake for 25-30 minutes.
After baking, mix in diced dried mango and diced dried pineapple, along with any other desired fruit.
