Chunky Banana Peanut Butter Granola

Ingredients

  • 500g jumbo sized rolled oats
  • 150g dried banana chips
  • 3 tbsp coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp smooth peanut butter (I use Meridian foods)
  • 1 tbsp plain flour

Preparation

  1. Preheat the oven to 160°C and line a baking tray with foil

  2. In a measuring cup, melt the coconut oil and then stir in the maple syrup and peanut butter

  3. In a large bowl, combine the oats and flour, then pour over the melted coconut oil, maple syrup, and peanut butter mixture and combine well

  4. Pour the mixture onto the baking tray and lightly pat it down, then bake for 15-20 minutes without stirring or mixing during or after baking to maintain chunky bits

  5. Leave to cool completely, then break into chunks and add the dried banana
