No-Bake Chocolate Peanut Butter Fudge Oatmeal Bars

Ingredients

  • 2 1/4 rolled oats
  • 1 1/2 oatmeal flour
  • 1 cup coconut oil (melted)
  • 1/3 cup maple syrup
  • 1/4 tsp sea salt
  • 1 cup smooth peanut butter
  • 275g @xocousa dark chocolate
  • 2 tsp vanilla extract

Preparation

  1. In a large bowl mix coconut oil, maple syrup & vanilla extract.

  2. Add oats, oat flour and sea salt into wet mixture until well incorporated.

  3. Line a 8x8 inch square baking dish with parchment paper.

  4. Press half of the oatmeal mixture to the bottom of the pan until evenly spread.

  5. Transfer baking dish to fridge while you prepare the filling.

  6. Using the double boiler method, melt your chocolate and peanut butter together, making sure to mix frequently to avoid from burning.

  7. Once chocolate and peanut butter is melted, pour mixture over the pressed oatmeal layer.

  8. Sprinkle the remaining of the oatmeal mixture over the filling.

  9. Refrigerate for 2-3 hours until set.

  10. Cut into squares and enjoy.
