Vegan Coffee Granola Recipe
Ingredients
- 2 cups rolled oats
- 4 tbsp maple syrup
- 2 tbsp almond butter (i used coffee almond butter)
- 1 tsp vanilla essence
- handful of chopped hazelnuts & pecans
- ground hazelnuts or almonds (i eyeballed this but around 1/4 cup)
- ✨ coconut oil (1/4 cup melted, or can use a spray)
Preparation
Preheat oven 150°C fan forced
Line a baking sheet
Mix the coffee with the hot water
Mix the wet ingredients together (coffee, maple, almond butter, vanilla, coconut oil)
Stir the wet over the oats and when well combined fold through the chopped nuts
Spread onto a baking sheet, clumping the granola together (here i sprayed on some coconut oil)
Bake for 20 mins, stir, bake for 5 mins, stir bake for 5 more mins
