Nutty Maple Granola

Ingredients

  • 4 cups oats
  • 1 cup chopped almonds
  • 1 cup chopped walnuts
  • 3/4 cup pumpkin seeds
  • 1/2 cup shredded coconut
  • 1/4 cup hemp seeds
  • 1/2 cup raisins
  • 1 tbsp pumpkin spice
  • 1 tbsp cinnamon
  • 3/4 tsp salt
  • 1/2 cup maple peanut butter
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 300°F (150°C).

  2. In a large mixing bowl, combine the oats, chopped almonds, chopped walnuts, pumpkin seeds, shredded coconut, hemp seeds, raisins, pumpkin spice, cinnamon, and salt. Mix well.

  3. In a small pot, add the maple peanut butter, coconut oil, maple syrup, and vanilla extract. Heat the pot and melt the ingredients together, stirring until well combined.

  4. Pour the melted wet ingredients over the dry ingredients in the mixing bowl. Mix thoroughly to coat all the dry ingredients evenly.

  5. Spread the granola mixture onto two baking pans.

  6. Bake the granola for 20 minutes. After 20 minutes, lightly mix the granola on the pans for even baking.

  7. Bake for an additional 10-15 minutes until the granola turns golden brown.

  8. Remove the pans from the oven and allow the granola to cool completely.

  9. Once cooled, break apart any large chunks of granola into desired sizes.

  10. Store the granola in glass containers to maintain freshness.

  11. Enjoy as a delicious and nutritious breakfast or snack!
