Apple Oat Muffins (Gluten-Free and Dairy-Free)

Ingredients

  • 2 cups oats, blended (preferably @onedegreeorganics sprouted oats)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup coconut sugar
  • 2 eggs
  • 1/2 cup applesauce
  • 1/4 cup avocado oil (e.g., @chosenfoods)
  • 1 tsp vanilla
  • 1 Apple, cubed or shredded
  • 1/2 cup chopped pecans

Preparation

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine all the dry ingredients.

  3. In another bowl, combine all the wet ingredients and add them to the dry ingredients.

  4. Fold in the cubed or shredded apple and chopped pecans.

  5. Fill muffin liners (or use parchment paper) with the batter.

  6. Bake for 20-22 minutes until the muffins are cooked through.
