Cinnamon Apple Waffles

Ingredients

  • 1 egg
  • 1/2 cup almond milk
  • 1 cup oat flour
  • 1/2 cup applesauce
  • 2 tsp coconut sugar (add more for sweeter waffles)
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 cup finely diced apple

Preparation

  1. Whisk the egg in a bowl, then add almond milk, oat flour, applesauce, coconut sugar, vanilla, cinnamon, and baking powder. Mix everything together well.

  2. Fold in the finely diced apple into the batter.

  3. Preheat your waffle maker and lightly grease it if needed.

  4. Pour the batter onto the waffle maker, using less batter for mini-sized waffles. Cook according to the waffle maker's instructions until golden and crispy.

  5. In a separate pan, heat coconut oil over low-medium heat. Add diced apple and sprinkle with cinnamon. Sauté the apples until they become soft.

  6. Serve the cinnamon apple waffles topped with sautéed cinnamon apples and maple syrup.
