Blend & Bake Sheet Pancakes

Ingredients

  • 2 large ripe bananas (brown spots essential)
  • 3/4 cup oats
  • 3/4 cup ground almonds
  • 3 eggs
  • 1/2 tsp baking powder
  • Toppings: raspberries, blueberries, flaked almonds (use ground nuts for <5 yrs)

Preparation

  1. Preheat your oven to 180°C (356°F).

  2. Blend all the ingredients except the toppings in a blender or use a stick blender in a large bowl until smooth.

  3. Pour the blended mixture into a 20cm square baking pan.

  4. Sprinkle the desired toppings (raspberries, blueberries, flaked almonds) evenly over the mixture.

  5. Bake at 180°C (356°F) for about 15-20 minutes until cooked through. Keep an eye on them after about 12 minutes, as the baking time might vary depending on the size of your baking pan.

  6. Once cooked, slice the sheet pancakes and serve.
