Nutty Coconut Granola

Ingredients

  • 200g oatmeal
  • 100g spelt flakes
  • 80g hazelnuts
  • 80g almonds
  • 1 cup of coconut flakes
  • 50g flax seeds
  • 5 tablespoons agave syrup
  • 2 tbsp liquid coconut oil
  • 1 teaspoon of cinnamon
  • Pinch of salt

Preparation

  1. Mix all the dry granola ingredients in a large bowl. Add the agave syrup and coconut oil. Mix with your hands until you get a crumbly texture with larger pieces.

  2. Spread the granola mixture on a baking sheet lined with parchment paper. Bake in a preheated oven at 180 degrees Celsius (fan oven) for 15 to 20 minutes.

  3. After 5-8 minutes of baking, turn the granola to ensure even baking of all seeds and grains.

  4. After another 8-10 minutes, remove the granola from the oven. Let it cool and harden on the baking sheet.

  5. Once the granola has cooled, add some white coconut flakes for a nice color contrast and enhanced flavor.

  6. Store the cooled granola in a light and moisture-proof glass or container to maintain its freshness.
