Vegan Oatmeal Raisin Cookies with Tahini
Ingredients
- 2 cups almond flour
- 1 tbsp olive oil
- 1 Bob's Red Mill egg replacer or a flax egg (1 tbsp flax meal + 2 tbsp water)
- 1/2 tsp cinnamon
- 1/4 tsp pink salt
- 4 tbsp maple syrup
- 2 tbsp tahini
- 1/2 cup unsweetened almond milk
- 1 cup oats
- 1/3 cup raisins
Preparation
In a bowl, mix almond flour, olive oil, egg replacer, cinnamon, pink salt, maple syrup, tahini, and almond milk.
Fold in oats and raisins.
Form the mixture into balls and flatten them into cookies.
Bake at 350°F for 18 minutes.
Top with vegan cream cheese.
