Single Serve Breakfast Cinnamon Rolls
Ingredients
- 2/3 cup oats
- heaped 1/2 tsp baking powder
- 1/4 cup vegan yogurt
- 1 apple
- maple syrup (to taste)
- cinnamon (to taste)
- few raisins
- maple syrup (to taste)
- vegan cream cheese (few tbsp)
- maple syrup (to taste)
Preparation
Roughly chop and core the apple, place it in a saucepan with about 1 tbsp water and cook for 15 mins, or until soft
Once soft, mash the apple and stir in the cinnamon, maple and raisins to taste
Preheat your oven to fan 170°C
Blend the oats until they form a flour
Mix the oats, baking powder and yogurt (adding a bit at a time, you may need more) until a dough forms - you don’t want it too sticky
Spread the cinnamon applesauce onto the dough
Oll it up and slice into 4
Bake for 20 mins in a skillet or ramekin
Meanwhile, make your frosting from some vegan cream cheese and maple syrup
Once the cinnamon rolls are done, enjoy dipped into or iced with the frosting
