No-Bake Strawberry Yogurette Cake
Ingredients
Cookie base
- 100 g oat cookies
- 60 g butter
Cream and topping
- 8 sheets gelatin
- 250 g strawberries
- 500 g yogurt
- 70 g sugar
- 200 g heavy cream
- 100 g strawberry yogurt bars (chilled)
Preparation
Line an 18 cm springform pan with parchment paper
Crumble the cookies finely in a food processor or freezer bag
Melt the butter in a saucepan
Add the melted butter to the cookies and mix together
Transfer the mixture to the springform, spread and press down slightly
Chill the base
Soak the gelatin in cold water according to package instructions
Puree the strawberries
In a bowl, mix the yogurt with sugar and pureed strawberries
Warm 5-6 tablespoons of the yogurt mixture with the drained gelatin and dissolve the gelatin
Stir into the remaining yogurt mixture and chill for about 15 minutes until it begins to set
Whip the cream until stiff
Fold the whipped cream into the mixture and spread over the crumb base
Chill for at least 2 hours
Carefully remove the cake from the springform ring
Transfer to a cake plate
Using a vegetable peeler, peel many strips from the chilled yogurt bars and generously garnish the cake
Tips
For best results, chill the yogurt bars in the refrigerator for at least 2 hours before garnishing
