Raw Strawberry Bites
Ingredients
- for the crust:
- 1 cup of chopped almonds
- 125g pitted dates
- for the filling:
- 200g sliced strawberries
- 100g pitted dates
- 100g cashew butter
- 1/3 cup almond/oat milk
- 1 tablespoon lemon juice
Preparation
Blend until the 2 ingredients combine. Press the crust into equal portions in 6-8 muffin cups. Place the muffin tray in the freezer while you prepare the filling
Combine the filling ingredients in a blender, blend until smooth & creamy
Remove the muffin tray with the crust from the freezer and top each mini crust with the filling
Freeze overnight or for 8 hours. Thaw for 5 minutes before eating
Note: for the crust feel free to add coconut shavings, nuts, seeds or dried fruit
