Raw Strawberry Bites

Ingredients

  • for the crust:
  • 1 cup of chopped almonds
  • 125g pitted dates
  • for the filling:
  • 200g sliced strawberries
  • 100g pitted dates
  • 100g cashew butter
  • 1/3 cup almond/oat milk
  • 1 tablespoon lemon juice

Preparation

  1. Blend until the 2 ingredients combine. Press the crust into equal portions in 6-8 muffin cups. Place the muffin tray in the freezer while you prepare the filling

  2. Combine the filling ingredients in a blender, blend until smooth & creamy

  3. Remove the muffin tray with the crust from the freezer and top each mini crust with the filling

  4. Freeze overnight or for 8 hours. Thaw for 5 minutes before eating

  5. Note: for the crust feel free to add coconut shavings, nuts, seeds or dried fruit
