Simple No-Bake Kiwi Tart

Ingredients

Crust

  • 1 cup pitted dates
  • 1/3 cup almond meal
  • 1/3 cup coconut flakes
  • 1/2 cup raw nuts (pecans, almonds, or pistachios)
  • 1/4 tsp salt

Filling

  • 3 frozen bananas
  • 1/2 cup full fat coconut cream (canned)
  • 2 tsp matcha powder
  • 1/2 tsp spirulina
  • Juice of 1/2 lemon
  • 3-4 tbsp maple syrup
  • 1 tsp vanilla
  • 2 peeled kiwis
  • 2 more kiwis for decoration
  • 2 tsp coconut flakes for topping

Preparation

  1. Blend the crust ingredients together until well combined

  2. Press the mixture firmly into a tart pan to form the crust

  3. Blend the filling ingredients until smooth and creamy

  4. Pour the filling evenly over the prepared crust

  5. Refrigerate the tart for several hours or until fully set

  6. Decorate with sliced kiwis and sprinkle coconut flakes on top
